I know I've been slacking lately as far as cheese goes but I have a perfectly valid 3-word excuse: LEMON. ANGEL. PIE. There are no words to describe this pie, you just have to make and enjoy it yourself. Here's the recipe: MERINGUE CRUST 4 room temperature egg whites (save yolks) 1 c. sugar 1/4 tsp. cream of tartar FILLING 4 egg yolks 1/2 c. sugar 3 Tbs. lemon juice 1 c. heavy cream, whipped *Beat the egg whites well (don't be a dumbass, use electric power)...add cream of tartar...gradually add sugar 2 Tbs. at a time. Spread into bottom and up the sides of a greased 9" pie pan...bake at 275 for 1 hour. Cool. *Beat the egg yolks and stir in 1/2 c. sugar and 3 Tbs. lemon juice. Cook in a small sauce pan over low heat until thick (this takes forfucking ever but it'll be worth it). Transfer to a bowl, cover with plastic wrap, and cool in the refrigerator. *Whip the 1 c. cream and add the custard. Poor into the meringue shell and chill for at least 2 hours. *Eat until you can't eat no mo' No go, go make some pie...
